Frugal Recipe of the Week – Chicken Spaghetti

CHICKEN SPAGHETTI

An all time family favorite in my house for about $1.00 per serving – maybe even cheaper with sales & coupons!

1 Whole Chicken – boiled, cooled & deboned (about $4.00 on sale)
1 lb Velveeta Cheese or other processed cheese loaf (Kroger brand is $3.99 for the 2 lb. loaf)
1 14 oz. can Cream of Mushroom Soup (Kroger brand is around .69 cents) Link is for a printable coupon from Campbell’s.
1 14 oz. can Cream of Chicken Soup (Kroger brand .79 cents) Link is for a printable coupon from Campbell’s.
1 12 oz. package of cooked spaghetti (around $1.00)
1 med. Bell Pepper (around .50 cents)
1 small onion (around .50 cents)
1 stalk celery (usually about $1.50 for the whole bunch)

Boil, cool & debone chicken – set aside. Boil spaghetti noodles – set aside. In med. saucepan, lightly saute onion, bell pepper & celery in butter or olive oil until just tender. Add in the soups & about 2 cups of broth from chicken. Stir well. Cut processed cheese in to small chunks and add to sauce mixture. Simmer on low heat until melted. Season with salt & pepper to taste. Add chicken and noodles, mix well. Serve with cornbread & salad. Makes about 12 servings.
